This reminds me very much of mark Powells artwork- a compliment btw!
Ive attempted drawing old men in this style, and I can do the wrinkles nicely but the hair is so hard- especially the beard; I find that when I try to create the thin hairs, the lines aren't thin enough or white enough!

u must get sharp erasers. cut the erasers into pieces will do.
or you can get a battery eraser. =)
a few lines is done with white ink pen, but i regret doing that.

ya that was the 1st time i use the grid method...
the pencil is too sharp and i gave too much pressure

I use a HB... Very Very Lightly, almost near invisible!
And I only do the Outline as well...
I may take your suggestion, and try a B or 2B...? ;)

did you see my latest drawing? the old dancer's portrait.
2B pencil is used and so far never damaged the paper.
i guess the paper's choice is also important.
